Unique ingredients make the cuisine of each region within Mexico distinctive. Those in the south, especially the famous chicken mole and pork in adobo sauce, are quite different from those in the north. Southern varieties feature mild and flavorful dried chile peppers that are common to the region - sweet Ancho chile, smoky Guajillo chile, and the flavorful, but somewhat hot, De Arbol chile. Fresh spices, particularly cinnamon, cumin, cloves, oregano, and aniseed, are prevalent in southern sauces. Sauces in the south include seeds (sesame and pumpkin), fruit (raisins and plantains), and nuts (usually peanuts or almonds). Combined with the chile peppers, these added ingredients make southern sauces more complex than those served in the north.
Toño & Beto's has created natural foods faithful to the traditional recipes and methods of the finest of Southern Mexican cuisine. We remove all the stems, seeds, and veins from the finest chile peppers, then roast, soak and grind them. Next, we roast and toast seeds (pumpkin and sesame), bread, peanuts, garlic and onion; then pulverize and combine them with the chile peppers and other regional spices.
Unlike all competing products - which are oily pastes packed with preservatives - Toño & Beto's Mole's de Mexico are made from 100% all-natural ingredients and contain no additives or preservatives.
Our sauces are easy-to-prepare granulated powders - you simply add your favorite broth or water; then heat and stir until the desired consistency is achieved. It's that simple! Perfect every time, Toño & Beto's all-natural sauces have impressed and inspired the most discriminating chefs and cooks, worldwide. They allow even novice cooks to make the most complex mole sauce, enchilada sauce, adobo sauce or sophisticated dry rubs and marinades in a matter of minutes.
Toño & Beto's offers four categories of distinctive gourmet products: mole sauces, machas (dry salsa), dried chile flakes and powders, and soup bases.
Mexican cooking often uses dry salsa -- Macha -- to quickly and conveniently add complex seasonings to dishes. Roasted serrano chiles, nuts (peanuts or almonds) and garlic, together with salt and spices, make Machas as versatile as salt or black pepper. Grocer's and specialty retailer's shelves are replete with seasonings containing chile peppers or chile powder. Variously described as Cajun, Jamaican, or Mexican, with many bearing the names of well-known chefs, few equal, and none exceed, the all-natural flavorful and purity of Toño & Beto's Salsa Machas. Unlike most other brands, Toño & Beto's Salsa Machas contain no preservatives, chemical flavorings, coloring agents, or other unhealthy additives.
In Mexico, dried chiles, especially ancho (a dried poblano), guajillo and de arbol, are some of the most commonly used chile peppers. Offering distinctly different flavor than their fresh counterparts, these dried chiles are treasured and indispensable ingredients in central and southern Mexican cuisine. Our dried chiles are often used in barbecue sauce, dry rubs, chile sauces, and marinades. Like all of our products, our dried chile flakes are all-natural and completely free of preservatives, artificial colorings and additives.
